The food and wine of the Karst region of Trieste is a treasure trove of unique and authentic flavours, where olive oil, characterised by a fruity taste with slightly spicy notes, is produced in an area that is surprisingly suitable for growing olives, despite its northern location. Local cheeses reflect the aromatic Karst herbs, offering intense and distinctive flavours. Honey, known for its exceptional quality and variety, is a product of an area rich in biodiversity, with unique blooms that give each type of honey a unique taste. In addition, Karst wines such as Teran and Vitovska embody the true essence of the Karst terroir: Teran, with its deep red colour, rich, slightly tannic taste and marked acidity, is perfect to accompany robust local cuisine, while Vitovska, an elegant and aromatic white wine, expresses the subtlety and complexity of the Karst soil.
